2013年厦门市售小麦粉和玉米面中3种真菌毒素监测结果分析 被引量:4

摘要 目的了解厦门市售小麦粉和玉米面中3种真菌毒素污染状况。方法对2013年6个区收集的流通市场上小麦粉和玉米面共计114份样品,用液相色谱-串联质谱法检测3种真菌毒素的含量,根据GB 2761-2011判断结果。结果小麦粉和玉米面中3种真菌毒素的检出率低于2010年全国平均水平。小麦粉中脱氧雪腐镰刀菌烯醇(DON)检出率最高达89.9%,其中6份样品检出值超过国家限量标准。玉米面中玉米赤霉烯酮(ZEN)的检出率最高达21.8%,3份样品检出值超过国家限量标准。散装样品检出率相对较高。结论厦门市售小麦粉和玉米面中受多种真菌毒素污染,相关部门应加强监管力度。 Objective To understand the pollution status of three categories of mycotoxin in wheat flour and cornmeal from Xiamen markets in 2013. Methods In 2013, a total of 114 wheat flour and cornmeal samples were collected from six districts to detect the contents of three categories of mycotoxins by liquid chromatography - tandem mass spectrometry. The results were evaluated according to GB 2761 - 2011. Results The total detection rates of the three categories of mycotoxins were lower than the national average in 2010. Among the three categories of mycotoxins, the detection rate of deoxynivalenol (DON) in wheat flour was highest, reaching 89.9%, and it was found over the national standard in 6 samples. The detection rate of zearalenone (ZEN) in cornmeal was highest, reaching 21, 8%, and the contamination level in 3 samples was above the national limit. The detection rate of bulk samples was relatively higher than the packed ones. Condusion The wheat flour and cornmeal samples were contaminated by multi - mycotoxins in Xiamen city. Related departments should strengthen supervision on this.
