摘要
为探明宰前休息时间对肉鸡体重及肉质与福利的影响,找出肉鸡屠宰前最佳休息时间,以AA肉鸡为研究对象,随机分成2个处理组(室内平养组和室外散养组),在屠宰前分别休息0min、30min、60min、90min和120min后屠宰,测定相应指标。结果表明:宰前休息时间和饲养方式对肉鸡的体重和肛温均无显著影响。在平养方式下,宰前休息0min、90min组肉鸡的拍翅时长显著高于30min和120min组(P<0.05),休息0min组肉鸡的pH1值显著小于120min组(P<0.05),休息0min、30min和60min组肉鸡的滴水损失显著大于120min组(P<0.05),休息90min、120min组肉鸡的肉色a*值显著大于0min组(P<0.05);在散养方式下,宰前休息0min组肉鸡的拍翅时长显著高于60min组(P<0.05),休息0min组肉鸡的pH2值显著小于60min组(P<0.05),休息0min和30min组肉鸡的剪切力显著大于60min组(P<0.05)。宰前休息60min、90min和120min时散养组肉鸡的发声行为显著高于平养组(P<0.05),休息30min时散养组肉鸡的拍翅时长显著高于平养组(P<0.05),休息120min时散养组肉鸡的滴水损失显著大于平养组(P<0.05)。运输后适当休息有助于降低机体应激,提高福利,缓解肉质下降,平养组肉鸡的最佳宰前休息时间为90min,散养组为120min。
AA broilers of two groups (indoor raising and outdoor raising)were slaughtered after 0min, 30min,60min,90min and 120min lairage time to study the effects of lairage time on weight,meat quality, anal temperature and wing flapping duration of broilers for determining the optimum lairage time before slaughter.The lairage time and raising pattern have no significant effects on weight and anal temperature. The wing flapping duration of broilers with 0min and 90 min lairage time is significantly longer than with 30 min and 120 min lairage time under the indoor raising pattern.The pH1 of broilers with 0 min lairage time significantly is lower than with 120 min lairage time under the indoor raising pattern.The drip loss of broilers with 0min,30 min and 60min lairage time is significantly higher than with 120min lairage time under the indoor raising pattern.The meat color a*of broilers with 90 min and 120 min lairage time is significantly higher than with 0min lairage time under the indoor raising pattern.The wing flapping duration of broilers with 0 min lairage time is significantly longer than with 60 min lairage time under the outdoor raising pattern.The pH2 of broilers with 0min lairage time significantly is lower than with 60 min lairage time under the outdoor raising pattern.The shearing force of broilers with 0min and 30min lairage time is significantly higher than with 60min lairage time under the outdoor raising pattern.The vocal behavior of broilers with 60 min,90min and 120 min lairage time under the outdoor raising pattern is significantly higher than under the outdoor raising pattern.The wing flapping duration of broilers with 30 min lairage time under the outdoor raising pattern is significantly higher than under the indoor raising pattern.The drip loss of broilers with 120 min lairage time under the outdoor raising pattern is significantly higher than under the indoor raising pattern. In conclusion, the proper rest time after transport can reduce broiler’s body stress and alleviate decline of meat quality.The optimum lairage time for broilers under the indoor and outdoor raising patterns is 90 min and 120 min respectively.
