摘要
从发酵酸黄瓜中筛选到一株肠膜明串珠菌ZLG85,对其产生的肠膜明串珠菌素的抗菌谱及生物稳定性进行了研究。肠膜明串珠菌素ZLG85除了对单核增生李斯特菌具有较好的抑制效果之外,还能抑制其他食品中常见的致病菌的生长,抑菌普较广。肠膜明串珠菌素在低温,低pH值条件下也能抑制单增李斯特菌的生长;对人体常见的蛋白酶具有很强的敏感性;抑菌活性随着无机盐NaCl、KCl、CaCl2、ZnSO4、MgSO4浓度的升高而降低,一价盐离子Na+、Ka+对其活性的影响小于二价盐离子Ca2+、Zn2+、Mg2+;有机溶剂对其抑菌活性影响不显著。
This paper studied the stability of Leuconostoc mesenteroides ZLG85 and produced Leuconostoc mesenteroides ZLG85 from fermentation cucumber. The inhibition of mesentericin ZLG85 on the growth of both Listeria monoeytogenes and common pathogens in food industry indicated that the inhibitory spectrum of Leuconostoc mesenteroides ZLG85 is widely. The experimental results showed that Leueonostoc mesenteroides ZLG85 still could inhibit the growth of Listeria monocytogeues under low temperature and pH,and have highly sensitive to the common human protease. The low salt concentrations had less effect on the antibacterial activity,and the loss of antibacterial activity was more on the higher salt concentrations. The effect of monovalent salt ions Na+,Ka+ on Leueonostoe mesenteroides ZLG85 acticity was less than divalent salt ions Ca^2+,Zn^2+ ,Mg^2+. The organic solvents didn't have significant effect on the antibacterial activity.
