甘南州食品中食源性致病菌监测结果分析 被引量:3

Surveillance of foodborne pathogenic bacteria in foods in Gannan Prefecture

摘要 目的了解甘肃省甘南州食品中食源性致病菌污染状况,确定可能污染致病高危食品,发现食品的安全隐患,为食品安全监管提供科学依据。方法按《食源性致病菌监测工作手册》和中华人民共和国国家标准《食品卫生微生物学检验》(GB/T4789-2003)规定的程序和方法检测、分离致病菌。结果 2010─2012年共检测1 024份样品,检出食源性致病菌104株,总检出率10.16%;蜡样芽孢杆菌检出率最高21.69%,各类食品中餐饮食品污染最为严重,阳性率17.55%,街头食品中检出率最高21.43%,第三季度食品中食源性致病菌检出率最高13.43%。结论甘肃省甘南州存在多种食品安全隐患,食品安全执法部门应重点监督那些致病高危食品,减少食源性致病菌的发生。 Objective To know the contamination status of food-borne pathogens in food in Gannan Prefecture, identify potential high-risk food, find out the hidden danger to food, carry out the risk prediction, reduce the incidence of food-borne diseases and provide scientific basis for food safety supervision. Methods According to Handbook of Foodborne Pathogens Surveillance and Microbiological Examination for Food Hygiene of Chinese national standards(GB/T4789-2003), the procedures and methods were followed to detect and isolate pathogens. Results From 2010 to 2012, 1 024 samples were detected totally, and 104 strains of foodborne pathogens were detected, with the total detection rate of 10.16%. The highest detection rate was 21.69% of Bacillus cereus. Out of all detected food, contamination of catering food was the severest, with the positive rate of 17.55%, and the highest detection rate was 21.43% in street food. The highest detection rate of foodborne pathogens in food was 13.43% in the third quarter. Conclusions There is hidden danger to food of many kinds in Gannan Prefecture. Departments of food safety supervision and law enforcement should focus on those at high risk of food pathogens to reduce the incidence of foodborne pathogens.
