摘要
采用酶解法提取秀珍菇有效成分,以氨基酸利用率为主要评价指标,通过单因素试验和正交试验,得到秀珍菇的最佳酶解条件为复合风味酶用量0.5%,反应时间120 min,反应温度50℃,pH值8.5,得到的秀珍菇酶解液氨基酸利用率为27.9%。
The active ingredients in Pleurotus geesteranus are extracted by enzymolysis,with the availabilities of amino acids as the main evaluation indexes. Based on single-factor tests and orthogonal experiment,the main results are as follows:the dosage of flavourzyme is 0.5%,reaction time is 120 min,the reaction temperature is 50 ℃,pH 8.5,the availabilities of amino acids of Pleurotus geesteranus is 27.9%.
