基于供应链的高校餐饮采购管理研究

面对当前食品原料价格持续上涨、食品安全风险增加、人力成本大幅提高等压力,高校餐饮组织的采购问题日益突出。从供应链管理的角度看,高校餐饮组织采购管理中存在组织设计不合理、采购流程环节缺失、采购方式单一、供应商的选择机制不健全等问题,通过采取组织结构的调整、采购流程的再造,采购有关机制的规范等措施,能从很大程度上优化高校餐饮组织的采购管理,提升采购管理的绩效。
