摘要 面对当前食品原料价格持续上涨、食品安全风险增加、人力成本大幅提高等压力,高校餐饮组织的采购问题日益突出。从供应链管理的角度看,高校餐饮组织采购管理中存在组织设计不合理、采购流程环节缺失、采购方式单一、供应商的选择机制不健全等问题,通过采取组织结构的调整、采购流程的再造,采购有关机制的规范等措施,能从很大程度上优化高校餐饮组织的采购管理,提升采购管理的绩效。 The face of the current food raw material prices continued to rise, increasing good safety risk, a substantial increase in labor costs and other pressures, procurement organizations have become increasingly prominent university dining. From the perspective of supply chain management, procurement management organization exists in college dining organizational design is unreasonable, the missing link in the procurement process, a single procurement, vendor selection mechanism is not perfect and so on, through the adoption of organizational restructuring, procurement processes reengineering , and other procurement--related measures to regulate the mechanisms, from large organizations to optimize university dining procurement management, procurement management to enhance performance.
