响应面法优化深水红娘鱼去脏加工工艺 被引量:1

Optimization of Gutting Process of Lepidotrigla abyssalis by Response Surface Methodology

摘要 为了降低去脏过程中鱼肉损伤,提高内脏去除率,优化去脏机剖切及去脏机构的技术参数,利用自制的小杂鱼去脏试验平台,以深水红娘鱼为试验对象,应用二次回归通用旋转组合试验设计,研究传送带线速度、剖切刀转速和去脏轮转速与小杂鱼去脏后可接受性评分之间的关系,建立去脏后可接受性评分同剖切及去脏机构技术参数间的数学模型。结果表明;采用无齿圆盘刀剖切深水红娘鱼效果最佳,剖面光滑而平整,去脏后鱼体可接受性评分值较高;相同转速条件下,刀盘逆向剖切其去脏效果优于顺向剖切;各因素对深水红娘鱼去脏后的可接受性评分影响依次为去脏轮转速>传送带线速度>剖切刀转速。通过对拟合方程求极值,得出适合深水红娘鱼去脏最佳的参数组合是:传送带线速度1.39 m/s、剖切刀转速1280.0 r/min、去脏轮转速95.0 r/min。在此条件下达到可接受性评分的预测最大值9.98,同时满足去脏加工的工艺要求。 In order to avoid the fish damage and increase gut removal rate in gutting process, optimizting the oper- ation parameters of slitting and gutting institution, adopting gutting effect test with self-developed gutting mechanism with the Lepidotrigla abyssalis for the test object, using the quadratic regression orthogonal rotational combining design, the relationships of acceptability evaluation with transmission speeds, slitting cutter rotation speeds and gutting wheel rotation speeds were studied, and the mathematical model between the acceptability evaluation and operating parameters was es- tablished. The result showed that using a toothless disc cutter had the best slitting effect that could achieve a smooth and fiat slitting surface and a higher acceptability evaluation. Under the same conditions, converse slitting had a better effect than consequent slitting, the effect degrees of 3 factors on the acceptability evaluation was as following: gutting wheel rotation speeds 〉 transmission speeds 〉 slitting cutter rotation speeds. Through the simulating top-choosing equa- tion, the best parameter combination under the gutting process of Lepidotrigla abyssalis experiment conditions was ob- tained as following: the transmission speed was 1.39 m/s, the slitting cutter rotation speed was 1 280.0 r/min, the gutting wheel rotation speed was 95.0 r/min, and the acceptability evaluation of gutting effect was achieved maximum of 9.98, at this time, which could meet the needs of gutting process.
