摘要
2013年全国餐饮住宿业的经营业绩总体下滑,浙江金华地区两极分化明显。文章遴选60家限上企业开展实证调研,从企业网点布局、经营结构、经营成本、人才培养、企业品牌、行业竞争等方面探究发展困境及原因,进而从政府、餐饮住宿行业、企业三个层面研究对策,建议政府关注人才培养重持续,行业开拓市场谋创新,企业立足特色赢利润,使餐饮住宿业从容面对困境,健康发展。
The business performance of hotels and catering industry totally declined in China in 2013. In this context, their development trend of polarization in the Jinhua region of Zhejiang province has been very obvious. Based on empirical research of sixty companies above designated enterprise in Jinhua city, this paper explores the development predicament and its cause from six aspects of business network layout, management structure, operating cost, talent training, the brand and the industry competition. It puts forward strategies and measures at three levels of government, hotels and catering industry, and enterprises in order to facilitate hotels and catering industry sound development in their difficulties, which are focusing on talent cultivation to ensure the sustainable development of the industry at the government level, developing markets to promote the industry's innovation at the industry level, and basing on their unique resources to make more profits at the enterprises level.
