3D Printing Technology's Research and Application and Development Prospects in Food Industry

摘要 3D打印作为一项新兴的快速成型技术,按照"逐层打印,堆叠成型"生产产品,具有方便、灵活、速度快、精度高等特点,在航天、医学、食品、建筑、生化、工业、文物保护、配件饰品等诸多领域得以广泛应用。简要介绍3D打印技术的原理和材料使用情况,对其应用进展进行综述。重点阐述3D打印技术在食品行业的研究应用,介绍3D食品打印机的特点,对其潜在问题进行详细分析并作出建议,对3D打印技术的发展前景作出展望,旨在为3D打印技术在食品行业的研究应用提供理论参考。 3D printing as a new rapid prototyping technology which print products step by step, then stack molding, have convenient, flexible, high speed, high precision and other features is widely used in the aerospace, medical, food, architecture, biochemical, industrial, cultural relics protection, accessories, jewelry, and many other fields. This paper briefly introduces the principle of 3D printing and it's material usage, make a summarize to it's application progress. Emphasis on the research and application of 3D printing technology in food industry, introduces the features of food printer, then make a detailed analysis of the potential problem and give some suggest. Finally, make a prospect of the development of 3D printing technology. This paper aims at provide theoretical reference for the used of 3D printing technology in food industry.
