燕麦淀粉分离提取工艺优化 被引量:3

Optimization of Extraction Technology of Oat Starch

摘要 为优化燕麦淀粉提取工艺条件,采用稀碱法提取燕麦淀粉,考察了液固质量比、pH、提取温度和提取时间对燕麦淀粉提取效果的影响,通过单因素和正交试验,确定燕麦淀粉的适宜提取工艺条件为:pH 10、提取温度35℃、提取时间3 h、液固质量比为10︰1。在此工艺条件下,淀粉得率为75.85%,淀粉中蛋白残留为1.30%,经过中性蛋白酶纯化处理后的燕麦淀粉中蛋白残留量可降为0.6%。 Dilute alkali was used to extract oat starch, and protein residual was removed by neutral protease. The results showed that the best dilute alkali extraction technology was that the liquid-solid ratio 10 : 1, the extraction temperature 35℃, the lime 3 h, and the pH 10. Under such condition, starch yield was 75.85%, and the content of protein residual in starch was 1.3%, which was reduced to 0.6% after the enzymolysis by neutral protease. It will be available for research and development of Oat starch to provide technical support.
