摘要 应用Folin-Ciocalteu、DPPH、FRAP以及ABTS法分别测定33种水果的总酚含量及其抗氧化能力。结果显示,各种水果的总酚含量和抗氧化能力差异较大,总酚含量与DPPH·清除能力、Fe3+还原能力、ABTS+自由基清除能力存在着较强的线性相关关系。三华李、杨梅、李子以及芒果的抗氧化活性较强。 Total phenolic contents and antioxidant capacities of 33 fi'uits were evaluated by Folin-Ciocalteu, DPPH, FRAP and ABTS assays, respectively. The results indicated that the variations in the total phenolic contents and the antioxidant capacities among various fixtits were bigger. Total phenolic content was positively correlated with DPPH values, FRAP value, ABTS value. Sanhua plum, red bayberry, plum, and mango showed the strongest antioxidant activities.
