摘要
以石榴为原料,经榨汁、护色、调配、均质、杀菌等工序制得浑浊型石榴汁饮料。通过单因素试验和正交试验确定最佳工艺参数:均质压力30 MPa,杀菌时间15 min,石榴原汁中加入0.6%的柠檬酸,饮料调配过程中加入4%白砂糖、4%果葡糖浆、0.12%黄原胶和0.12%羧甲基纤维素钠,制成的浑浊型石榴汁饮料营养价值高、色泽风味好。
Through juicing, color-protecting, mixing, homogenization, sterilization and other processes, cloudy pomegranate juice beverage is made of pomegranate. Through single factor test and orthogonal experiment, the optimal parameters is got : 30 MPa of homogenizing pressure, 15 min of sterilization time, 0.6% citric acid added into pomegranate juice, 4% sugar, 4% fructose syrup, 0.12% Xanthan gum and 0.12% sodium carboxymethyl cellulose added into beverage during the process of mixing. Cloudy pomegranate juice beverage is of high nutritional value, good color and flavor.
