茶多酚对明胶-CaCO_3复合膜特性影响的研究 被引量:4

摘要 为开发出一种具有抗氧化活性的明胶-碳酸钙复合膜,向明胶-碳酸钙复合膜中添加不同浓度的茶多酚(TP)。通过对复合膜的厚度、机械性能、水溶性、水蒸气透过系数、色差、透光率、抗氧化活性、原子力显微镜(AFM)等方法表征,研究不同浓度茶多酚添加量对复合膜性能的影响。研究结果表明:加入茶多酚后,茶多酚与明胶相互作用导致复合膜的外观颜色较暗,水溶性和水蒸气透过系数有所降低。而复合膜的厚度、机械性能、1,1-二苯基-2-三硝基苯肼(DPPH)自由基清除能力均有所提高;原子力显微镜(AFM)结果表明随着茶多酚浓度的增加,复合膜表面越粗糙。对冷鲜肉的保鲜实验表明茶多酚添加到明胶-碳酸钙复合膜中开发出的抗氧化复合膜在食品包装方面具有潜在的开发价值。 In order to develop gelatin-calcium carbonate composite films with antioxidant activity, the different concentrations of tea polyphenol was added to it.The effects of TP concentrations in the film-forming solution on the film properties were determined by measuring thickness, gel strength,tensile strength(TS), elongation at break (EAB), water solubility ( WS), water vapor permeability ( WVP), color, light transmission and transparency, antioxidant activity as well as atomic force microscopy (AFM).The results showed that the incorporation of tea polyphenol caused interactions between gelatin and tea polyphenol and gave rise to the films darker appearance, the films showed decreased water solubility and water vapor permeability.After the addition of tea polyphenol,the films showed increased thickness, mechanical properties.Meanwhile,the incorporation of tea polyphenol enhanced 2,2- diphenyl- 1- picrylhydrazyl (DPPH) free radical scavenging activity of the films.The preservation experiment of chilled fresh pork showed the benefits of incorporation of TP into gelatin-calcium carbonate composite film and the potential for using the developed film as an active packaging.
