摘要
射频(RF)热处理技术具有体积加热、加热速率可调、能源利用率高等优点,其应用于食品工业已有很多年。本文重点就RF热处理技术应用于干果杀虫和杀菌,鲜果杀虫和病害控制方面进行了综述。RF热处理技术可以加速干果干燥,在不损害干果品质的前提下杀灭害虫或病菌;RF用于鲜果杀虫时果实的品质可能受到影响,将其用于鲜果侵染性病害控制的研究不多。最后对RF热处理技术今后的发展方向进行了展望。
RF heating technology has been applied in food industry for several years for its volumetric heating, adjustable heating rate and high energy efficiency. Applications of RF heating technology were reviewed and analyzed in disinfesting and disinfecting of dried fruits, and in fresh fruits to disinfect and disinfest. RF heating technology can accelerate the rate of drying dried fruits, killing pests or pathogens without damage to the quality of dried fruits.When RF applied in fresh fruits to disinfest, fruit quality might be affected.The research of RF application to control fresh fruits diseases is limited.The direction of development of RF heating technology was prospected.
