摘要
采用气-质联用仪(GC-MS),对宁波兴达炭业有限公司生产的精制竹醋液(简称兴达精制竹醋液)和日本铃木工业会所生产的精制竹醋液(简称日本精制竹醋液)的基本理化性能和化学组分含量进行测试分析。结果表明:2种精制竹醋液中有机物含量主要是有机酸、酚类、醛类、酮类、醇类和其它烃类和杂环类等物质组成;从组分含量分析可知,日本精制竹醋液的有机酸含量、醛含量、酯含量都比兴达精制竹醋液分别高10.7%、5.6%和4.2%,而酚类、酮类和杂环类都比兴达竹醋液分别低15.8%、2.7%和2.0%,说明日本精制竹醋液纯度更好,更适合作为饮料、食品、日化和医药领域使用。
In this paper,the basic physicochemical properties and chemical composition of two kinds of refined bamboo vinegars,which were made respectively by Ningbo Xingda Charcoal Industry Co.,Ltd.,(referred to as Xingda refined bamboo vinegar) and Japan's Suzuki Industrial Club Co.,Ltd (referred to as the Japanese refining bamboo vinegar),were analyzed by the method of GC-MS.The results showed that their organic matters mainly include organic acids,phenols,aldehydes,ketones,alcohols,other hydrocarbons,heterocyclic material,and so on.The contents of organic acid,ester,aldehyde of the Japan refined bamboo vinegar were respectively 10.7%,5.6% and 4.2% higher than that of the Xingda refined bamboo vinegar.However,the contents of phenol,ketones and heterocyclic of the Japan refined bamboo vinegar respectively were 15.8%,2.7% and 2.0% lower than that of the Xingda refined bamboo vinegar.This indicated that the Japan refined bamboo vinegar was purer,and more suitable to be used in the fields of beverage,food,cosmetic and medicine.
