摘要
烹饪教育课程资源相对于课程资源的内涵特点,其在外在表现上还具有体验性、实践性和人文性。"杭帮菜"非物质文化遗产融入烹饪课程体系面临的困境为:"非遗"资源向课程要素转化之困,烹饪教师对"非遗"资源的接纳之困,由"师徒相授"到职业教育转变之困。"非遗"进入烹饪课程资源的研究路径为:研究"非遗"资源的申报,熟悉"非遗"资源的研究成果;做好"非遗"资源进入烹饪课程资源的筛选工作,建立"非遗"资源库;做好"非遗"资源库利用与课程教学领域的对接工作。
Compared with the internal characteristics of curriculum resources, the external characteristics of the culinary education curriculum resources are the experience, practice and humanism of the curriculum. The dilemma the intangible cultural heritage - Hangzhou cuisine faces when it integrates into cooking curriculum system is: it's difficult for the intangible cultural heritage resources to be changed into curriculum dements; cooking teachers feel unwillingly to accept the intangible cultural heritage resourees; the master and apprentice mode has been changed to professional education. The research approaches that the intangible cultural heritage integrates curriculum resouuces are:doing research on the intangible cultural heritage and be familiar with the research results; selecting suitable resources to integrate curriculum and set up resource library of intangible cultural heritage;making full use of the resource library and choosing proper teaching method.
