疏穗方式对酿酒葡萄发育与品质的影响 被引量:5

Effects of cluster-thinning methods on growth and quality of wine grape

摘要 对赤霞珠葡萄进行不同方式疏穗,研究其对葡萄果实发育与基本品质的影响。结果表明:疏穗能够提高葡萄果实的pH值、总酚、单宁和花色苷含量,降低含酸量,影响果粒质量。疏上穗能显著增加pH和总酚含量,降低总酸和可溶性固形物含量,减轻果粒质量。疏下穗处理的葡萄果粒明显比其它处理的葡萄果粒小,单宁、总花色苷和五种单体花色苷含量高。 Different cluster-thinning methods on grape were used to study the effects of the methods on the growth and quality of wine grape. The results showed that cluster-thinning could increase grape pH,and content of total polyphenol,tannin and anthocyanin,decrease the content of titratable acid,no effect on single berry's weight; Method of cut top cluster can increase grape pH and total polyphenol significantly,decrease the content of titratable acid,soluble solids and single berry's weight; Grape has smallest size through method of cut below cluster,higher content of tannin and anthocyanin more than other grape berries.
