摘要
小麦麸皮资源丰富,戊聚糖含量约占20%,可以作为制备低聚糖的资源,麦麸低聚糖作为一种新型的食品添加剂,具有广阔的前景。本文介绍了近年来麦麸低聚糖提取工艺进展、结构特点、生物活性及应用领域,并对其发展前景进行了展望。
The pentosan,a good resource for the preparation of oligosaccharide,is about 20% in wheat bran which is a rich source. And as a new food additive,the pentosan has good prospects for development.In this paper,the progress in extraction technology,structural characteristics,biological activity and application was discussed,and the development prospect was proposed.
