摘要
近年我国食品毒理学得到迅速的发展,在保障食品安全和人类生命健康、维护环境友好与生态平衡、促进经济可持续发展中发挥了重要作用。我国食品相关的毒理学评价程序、指南及管理法规得到更新和完善;食品安全风险评估体系初步建立;细胞毒理学方法、毒理组学技术等已成为食品毒理学的重要研究工具;在人群流行病学调查中,以生物标志物为手段的检测研究成为食品毒理学研究的一个热点;采用转基因小鼠模型进行致癌性研究具显著优越性;体外替代法研究也得到进一步的发展。本文拟就近年来我国食品毒理学研究与应用的进展情况进行综述。
Science and technology of food toxicology in China has developed rapidly in recent years.Nowadays, food toxicology has played an important role in ensuring food safety and human life health, maintaining environment friendly and ecological balance,promoting the sustainable development of economy.It has updated and improved Chinese food related toxicological evaluation procedures, guidelines and management regulations , bringing food safety risk assessment system preliminaly established. Meanwhile, cell toxicological method and toxicology omics has become an important research tool of food toxicology,so did biomarker in epidemiological study.Also, transgenic mouse models using in carcinogenicity studiedes have showed significant superiority and alternative method in vitro research has got further development.This article is planedto review resent advance of technique applications and reasearch of food toxicology in Chinese.
