山东十产地玉米的氨基酸营养分析 被引量:3

摘要 选取了山东省10个不同产地的玉米进行了水解蛋白成分的测定,结果表明:玉米中氨基酸种类齐全,必需氨基酸的含量丰富,基本能占总氨基酸的35%以上。以氨基酸总量来看,兰山玉米的营养价值最高,海阳玉米最低,以必需氨基酸占总氨基酸的含量来看,莱阳玉米的营养价值最高,博山玉米的营养价值最低。莒南玉米的第一限制氨基酸为苏氨酸,博山玉米的第一限制氨基酸为亮氨酸,其余产地玉米的第一限制氨基酸为赖氨酸。另外,十种玉米中含有较高含量的谷氨酸、亮氨酸和脯氨酸,有很好的保健作用。 Determination of protein hydrolysate of corn from ten localities in Shandong province.The re-suits show that: corn full range of amino acids, and the content of essential amino acid was abundant, account for more than 35% of the total contents of amino acids. By the contents of total amino acids, nutritive values of the Lanshan corn was the highest , and the lowest was Haiyang corn. By the con- tents of essential amino acids, nutritive values of the Ju'nan corn was the highest, and the lowest was Lanshan corn. The first limiting amino acid of Ju'nan corn was threonine, and Boshan corn was leu- cine, and the rest corn were lysine. In addition,corn contains many glutamate, leucine and proline, have very good health care function.
