摘要
目的:研究苹果酸催化大豆异黄酮糖苷水解苷元的最佳工艺条件。方法:以大豆异黄酮糖苷水解率为评价指标,采用单因素和正交实验法对水解的工艺条件进行优化。结果:确定苹果酸催化大豆异黄酮糖苷最佳水解工艺条件为:反应温度130℃,反应时间3.0h,苹果酸水溶液浓度2.0mol/L,水解率达到94.0%以上。结论:优选得到的糖苷水解生成苷元工艺简单易行,稳定性好。
Objective:The optimum conditions of soybean isoflavone glycoside hydrolyzed into isoflavone aglucon by malic acid catalysis were found. Method:The hydrolysis rate of soybean isoflavone aglucon was taken as evaluation index. The hydrolysis process conditions were optimized by single factor and orthogonal tests. Result.The optimum hydrolysis conditions of soybean isoflavone glycoside hydrolyzed into isoflavone aglucon by malic acid catalysis:reaction temperature was 130℃,reaction time was 3.Oh,solution concentration of malic acid was 2.0mol/L, hydrolysis rate above 94.0%. Conclusion..This paper explored a simple and stable technologic way on soybean isofiavone glycoside hydrolyzed into isoflavone aglucon.
