伞形科鸭儿芹属植物营养成分及矿质元素含量分析 被引量:4

摘要 鸭儿芹属(Cryptotaenia DC.)隶属于伞形科(Apiaceae),全世界有5或6种,均为草本植物,其中部分种类可供食用。鸭儿芹(C. japonica Hassk.)自然分布于中国[1],别名三叶芹、鸭脚板、鸭掌菜或野芹菜,具有一定的药用价值和保健功能,也是一种营养丰富的蔬菜,在中国广东(佛山)、湖南、湖北、贵州和江苏等地均有一定种植面积,也是日本设施农业栽培面积最大的蔬菜种类。目前有关鸭儿芹的研究主要集中在种子产量、栽培措施及病虫害防治等方面。 Contents of nutritional components and mineral elements in tender stem and leaf (edible part) of Cryptotaenia japonica Hassk., C. japonica var. atropurpurea Makino and C. canadensis (Linn.) DC. of Cryptotaenia DC. in Apiaceae were analyzed, and their nutritive value was evaluated. The results show that water content in tender stem and leaf of them is 79.75% -81.09%, there is no significant difference; their contents of total sugar, crude fiber, crude protein, crude fat and Vc are 1.44% -2.02% , 21-25 g · kg-1 , 38.4-49.2 g · kg-1, 4.7-6.1 g · kg-1 and 0.434 6-0. 577 9 mg · g-1 respectively , and contents of K, Ca , Mg , Fe , Zn and P are 3. 503 3-5. 914 1, 1. 518 8-2. 307 0, 0. 052 7-0. 087 0, 0. 117 0-0. 371 1,0. 007 5-0. 010 0 and 0. 004 3-0. 011 3 mg· g-1, respectively, there are significant differences in all items. Average nutritive value of tender stem and leaf of three plants is 12.19-25.17, which is obviously higher than that of the common vegetables, meaning that Cryptotaenia plants can be developed and utilized as a kind of the new health vegetables.
