摘要
目的对葫芦岛市区各类餐馆服务场所的早餐类食品铝污染情况进行抽样检测,为针对性的开展食品卫生监督监测工作提供依据。方法对抽检的3 0份样品,按照国家标准GB/T 5009.182-20 03《面制仪器中铝的测定》执行,即铬天青比色法,卫生学评价按《食品中污染物限量》GB2 762-2 005(面制食品中铝限量指标)进行。结果在抽检的30件市售早餐食品中,油饼中铝含量符合国家标准的为88.89%;丸子符合国家标准的为66.67%;油条铝含量均不符合国家卫生标准。抽检食品中的铝含量为0-653.99mg/kg,以油条中的铝含量最高,其含量范围为1 34.69-653.99mg/kg。结论葫芦岛市市售早餐食品中铝含量确有超标情况存在,尤其以油条中铝残留量超标严重,对人体健康构成威胁,应引起有关部门高度重视,进一步加强食品安全监管力度,消除安全隐患。
Objective According to the 2014 food monitoring implementation arrangements for a variety of restaurants downtown Huludao breakfast food service establishments to conduct sampling and testing of aluminum contamination,provide the basis for future targeted to carry out food hygiene supervision and monitoring work. Methods 30 samples sampling,in accordance with the national standard GB / T 5009.182- 2003 "face made of aluminum measuring instrument" implementation,namely Chromazurol colorimetry, hygienic evaluation by "contaminants in foods" GB 2762-2005 (pastas Chinalco limit indicator) performed. Results In the sampling of 30 commercial breakfast foods,cake aluminum content in line with national standards for 88.89%; ball in line with national standards for 66.67% ;fritters aluminum content not meet national health standards. Sampling food in aluminum content 0-653.99mg/kg, the highest fritters aluminum content,the content in the range of 134.69-653.99mg/kg. Conclusions Huludao City commercial breakfast foods do have excessive presence of aluminum, especially in aluminum fritters excessive residues of serious threats to human health.Should cause the relevant departments attach great importance to further strengthen food safety supervision and eliminate safety hazards.
