两亲性生物聚合物是兼具疏水性和亲水性的生物大分子,可自组装、与其他分子协同组装或表面吸附。两亲性生物聚合物的物理化学性质独特,它具备良好的两亲聚合性且可生物降解,这有利于其用作食品功能因子载体。介绍了两亲性生物聚合物及其功能因子传递系统的最新研究进展,包括两亲性生物聚合物的组成、结构特性、分类、自组装、结合和协同组装的物理化学机制及它对营养物质的保护机制等,旨在为两亲性生物聚合物的研究提供一定参考。
With both hydrophobic and hydrophilic characteristics, biopolymeric amphiphiles can exhibit self-organization, co-assembly with other molecules and surface adsorption. Biopolymeric amphiphiles are biodegradable biomacromolecules which exhibit special physicochemical properties, and the large block- copolymeric structure provide polymeric amphiphiles with excellent properties as food functional factor carriers. The advances in application of biopolymeric amphiphiles in nutraceutical delivery systems were reviewed, which involved composition, structural property, classification, self-assembly, physicochemical mechanisms of binding and co-assembly as well as protection mechanisms of nutraceuticals. These were expected to provide a reference for promoting the research about biopolymeric amphiphiles.
