摘要 以富含γ-氨基丁酸(GABA)的发芽糙米粉、发芽大豆粉和发芽玉米粉为主要原料,研制高GABA发芽营养粉,以其色泽、冲调性、适口性和稳定性为考察指标,通过混料设计和正交实验优化发芽营养粉配方。结果表明,发芽营养粉的最优配方为发芽糙米粉40.0%、发芽大豆粉21.9%和发芽玉米粉38.1%,在此条件下营养粉的综合评分最高,达72.23;添加蔗糖8%,麦芽糊精11%,植脂末14%和脱脂奶粉7%时,发芽营养粉风味最好,产品中GABA含量高达16.63mg/100g。 The formula of germinated nutritional grain powder including germinated brown rice, germinated soybean and germinated corn was optimized by D- optimal mixture regression design and orthogonal design and parameters of chromaticity, palatability, brewing and stability were evaluated.The optimal formula of nutritional powder was obtained :the ratio of germinated brown rice flour, germinated soybean flour and germinated corn flour was 40.0% ,2L9% ,38.1 % ,respectively.The sensory evaluation score reached 72.23 for this ratio.Optimum flavor of the nutritional powder was obtained at a ratio of sugar,maltodextrin,creamer and skimmed milk of 8%, 1 1%, 14% and 7%, respectively.GABA content reached 16.63 mg/100g for this formula.
