摘要
目的了解管内高铁列车配餐食品卫生状况。方法对管内高铁列车配餐食品按现行有效标准方法进行菌落总数、大肠菌群、食源性致病菌的监测。结果2013年监测高铁列车配餐食品182份,合格率为67.0%。不合格食品均是由菌落总数和大肠菌群超标引起。不同种类高铁列车配餐食品中,以剁椒鱼套餐的监测合格率最低,为33.3%(P<0.001)。第四季度的监测合格率最低,为36.4%(P<0.001)。结论高铁列车配餐食品卫生状况不容乐观,需进一步加强监督监测管理工作,发现问题及时提出整改意见,采取有效措施。
Objective To understand the hygienic status of catering food of high-speed railway. Methods Bacterium count, coliform bacteria and pathogen were detected from catering food of high-speed railway of Beijing Railway Bureau by the correct valid standard. Results 182 samples were tested in 2013 , the qualified rate is 67.0%. Substandard food are caused by Bacterium count and Coliform Bacteria exceeded. The qualified rate of Duojiao Fish Package is 33.3% (P 〈 0. 001 ). The qualified rate of the fourth quarter is 36.4% , lower than the others ( P 〈 0. 001 ). Conclusion Catering food of high-speed railway hygiene situation is not optimistic, to improve and strengthen the management of controlled. Identify problems and timely rectification, to take effective measures.
