表面活性剂对葡甘聚糖复合乳液稳定性的影响

摘要 以Span、Tween系列非离子活性剂为乳化剂,葡甘聚糖(KGM)和乙基纤维素(EC)为分散相,考察KGM/EC乳液体系的抗聚并稳定特性。根据乳液稳定性理论分析,认为非离子活性剂分子亲油基团的结构及其与油相分子的相似度对乳液油水界面粘性及相应乳液抗聚并稳定性会产生较大影响。详细讨论了不同HLB值对KGM/EC乳液的冻融稳定性、贮存稳定性及化学稳定性的影响。 With Span,Tween series nonionic surfactant as an emulsifier,glucomannan (KGM)and ethyl cellulose (EC)as the dispersed phase,the paper investigated the anti-poly and stability characteristics of emulsion system about KGM/EC.Based on theoretical analysis of emulsion stability,it concluded that the structure of lipophilic groups of nonionic surfactant molecules and similarity of molecules in the oil phase have a greater impact on viscosity of oil water interface of emulsion and the corresponding anti-emulsion polymerization and stability.The paper also discussed in great detail the effects of different HLB values on freeze thaw stability,storage stability and chemical stability of KGM/EC emulsion.
