摘要
国家食品质量安全监督检验中心(北京100094)摘要从近年来,肉类掺假的事件层出不穷,使得消费者对肉类的食品安全问题甚为担忧。从物理技术、化学技术、免疫学技术、电泳技术以及DNA鉴定技术等方面对目前肉类掺假检测的国内外研究进展作一综述,并对肉类掺假检测技术的研究趋势进行展望。
In recent years, the meat adulteration events emerge in endlessly, make consumer worries about food safety problem of the meat. The meat adulteration could be identified by routine physical and chemical analysis, immunology, electrophoresis, and DNA identification technology and other methods. The research progress in identification of the meat adulteration was reviewed and the development trend of the detection and authentication technology was prospected.
