摘要
研究洋甘菊中多糖与黄酮的抗氧化活性及抑制亚硝化作用。对洋甘菊多糖、黄酮进行提取,测定这两种成分对二苯代苦味酰基(DPPH)、羟自由基(·OH)以及2,2-联氮-二(3-乙基-苯并噻唑-6-磺酸)二铵盐自由基(ABTS·)的清除能力,以及对亚硝化作用的抑制。结果表明,洋甘菊中多糖与黄酮能有效地清除亚硝酸盐和阻断亚硝胺合成,随反应浓度增加清除率和阻断率增大。表明洋甘菊中多糖与黄酮具有抗氧化活性并具有抑制亚硝化作用,多糖抑制亚硝化作用强于黄酮。
Study the antioxidant activity of Matricaria chamomilla(polysaccharide and flavonoids) extract, as well as inhibition of nitrosation. Polysaccharides, flavonoids and polyphenols were extracted from Matricaria chamomilla. Comparison of their antioxidant activity and inhibition of nitrosation was carried out by scavenging of DPPH radical, hydroxyl free radical(·OH) and ABTS free radical. The results showed that polysaccharides and flavonoids from Matricaria chamomilla can effectively block the removal of nitrite and nitrosamine synthesis, with the reaction concentration increased, the scavenging and blocking rate increasing. Extract from Matricaria chamomilla(polysaccharides and flavonoids) had strong antioxidant activity and inhibition of nitrosation, and polysaccharides inhibition was stronger than the flavonoids.
