非线性化学指纹图谱技术在食醋鉴别中的应用研究 被引量:2

摘要 采用非线性化学指纹图谱方法建立食醋的非线性化学指纹图谱,分析食用醋精、酿造食醋和配制食醋的指纹图谱的区别,找到能表征食醋质量信息的指纹图谱振荡周期数、振荡寿命等参数,并据此大致鉴别食醋中酿造食醋的含量,可以判断食醋真伪及质量优劣。结果表明,此法能将食用醋精与配制食醋、食用醋精与酿造食醋、配制食醋鉴别出来,并能准确表征食醋质量优劣。 Vinegar nonlinear chemical fingerprint was established, and the parameters of vinegar nonlinear fingerprint as oscillation period number, oscillation life, ect. ,which can characterize vinegar quality were found by analysis of fingerprints of edible vinegar, fermented vinegar and blended vinegar. Hereby, the fermented vinegar amount was about evaluated and the vinegar authenticity and quality could be judged. The results showed that the vinegar could he identified to ed ible vinegar,vinegar sample with fermented vinegar or blended vine- gar, fermented vinegar and blended vinegar, and evaluate vinegar qualities were determined by the method above.
