摘要
红曲米是一种有药用价值的功能性食品。文章总结了红曲米的多种代谢产物及其已知的功能,根据最新的研究,这些代谢产物都有特定的生理功能。此外,还介绍了红曲米的一些尚未明确机理的其他一些新的生理功能,是当前的研究热点。讨论了关于红曲米及其发酵产物的安全问题,展望了红曲米的研究前景和进一步研究的方向。
Red mold rice is a kind of food with pharmaceutical effect. A variety of metabolites and their known functions of red yeast rice were summarized, and each of the metabolites had a specific physio logical function. In addition, the study found that the other new physiological functions, which are current research hot spots, but the mechanism has not been fully present so far. This article discus ses the problems about the safety of red yeast rice and its fermented products and introduces the prospects for red mold rice research and the direction of further research.
