摘要
本文采用正交试验法研究巧克力涂衣料的基本配方。结果表明巧克力涂衣料的基本配方为代可可脂170g,碱化可可粉45g,奶粉75g,卵磷脂2.2g,由此配方制得的巧克力是一种高品质的涂衣料。
Basic formula of dry cake chocolate coated fabric was studied through orthogonal test method in the article. Results show that the basic formula of chocolate coated fabric was cocoa butter replacer 170g, alkalized cocoa powder 45g, milk powder75g, lecithin 2.2g. The formula of chocolate is a kind of high quality of the coated fabric.
