弱碱平台下啤酒废酵母加工工艺的研究

摘要 研究了啤酒废酵母中核糖核酸(RNA)、β-葡聚糖、蛋白质的综合加工工艺。以干燥啤酒废酵母为原料,采用弱碱工艺加工平台,最佳提取RNA条件为NaOH0.4%、碱料比150∶10、醇料比100∶10;提取β-葡聚糖条件为NaOH3%,碱料比150∶10、碱性蛋白酶600U/g;提取蛋白质条件为:第一次等电点pH值4.5,第二次pH值3.7。结果表明,RNA提取率为5.25%;β-葡聚糖提取率13.8%;蛋白质提取率13.2%。 Integrate extraction methods of RNA, β-glucan and protein from waste beer yeast was developed. Using dried waste beer yeast as raw material, at weak alkaline processing condition, the optimal extraction condition for RNA was NaOH 0.4%, alkali to material ratio 150∶10, ethanol to material ratio 100∶10. The optimal extraction condition for β-glucan was NaOH 3%, alkali to material ratio 150∶10, alkaline protease 600 U/g. The pH condition for protein extraction was 4.5 and 3.7 for the first time and the second time, respectively. The results showed that the extraction yield for RNA, β-glucan and protein was 5.25%, 13.8% and 13.2%, respectively.
