摘要
对我国38个茶叶产品国家标准的理化指标进行了比较分析,为进一步制订和修订茶叶产品标准提供参考。38个茶叶产品国家标准均对茶叶产品的理化指标作出了具体的要求,共涉及水分、总灰分、水溶性灰分、酸不溶性灰分、水溶性灰分的碱度、水浸出物、粗纤维、粉末、碎茶、碎末茶、茶多酚、氨基酸、含花量、非茶类夹杂物、茶梗含量、长于30 mm茶梗含量、冠突散囊菌等17项理化指标。38个茶叶产品国家标准均规定了水分和总灰分指标,而冠突散囊菌数只有茯砖茶作了规定,每个茶叶产品国家标准理化指标选择项目数量不一,最多规定了8项理化指标,最少的仅有3项理化指标。
This paper conducts a comparative analysis on the physical and chemical indicators in 38 Chinese tea product national standards to provide a reference for development and revision of tea product standard. The results shows that 38 national standards make specific request for physical and chemical indicators of tea products, involving 17 physical and chemical indicators such as moisture content, total ash, water-soluble ash, acid insoluble ash, water-soluble ash alkalinity, water extract, crude fiber, powder, broken tea, dust tea, tea polyphenols, amino acid, flower content, non-tea inclusion content, tea stalk content, tea stalk longer than 30 mm content, the Eurotium cristatum, etc. And moisture content and total ash are stipulated in these 38 tea products national standards while the Eurotium cristatum requirement only limited in Fuzhuan brick tea. The number of physical and chemical indicators of each tea product national standard is different, with a maximum of 8 indicators and minimum of 3 indicators.
