摘要
葛根素是豆科植物野葛的主要异黄酮成分,具有类雌激素活性,可改善血液循环,增强机体免疫力。目前国内对葛根素的稳定性研究较少,考察了pH值、温度、金属离子、H2O2、Na2SO3以及提取溶剂对葛根素稳定性的影响,为葛根素的生产加工及贮藏提供依据。结果显示:温度、Cu2+、还原剂Na2SO3对葛根素稳定性影响较大;随着温度升高,贮存时间延长,葛根素含量明显减少;Cu2+影响葛根素的紫外吸收光谱;Na2SO3导致葛根素最大吸收波长发生偏移,随着还原剂浓度的增加,吸光度有增大趋势。
Puerarin is the dominant isoflavone of leguminous plants Pueraria lobata(wild). As a kind of estrogen, it can improve blood circulation, strengthen the organic immunity. There are few literatures about the stability study of puerarin, this paper studied the influence of pH, temperature, metal ion, H2O2, Na2SO3 and extraction solvents on the stability of puerarin. Results showed that temperature, Cu^2+ and Na2SO3 had major impact on the stability of puerarin; With the increase of storage temperature and duration, puerarin content decreased significantly; Cu^2+ affect the UV absorption spectra of puerarin; Na2SO3 made the maximum UV absorption wavelength of puerarin shifted, and with the increase of Na2SO3 concentration, the absorbance values increased.
