摘要
为快速准确地定性判别猪肉糜中是否掺有鸡肉糜,在猪肉糜中添加不同比例的鸡肉糜,制备不同掺假样品74个,其中60个为掺有不同质量分数鸡肉的样品,14个为纯猪肉糜,并独立制备39个验证集样品,其中31个为掺有不同质量分数的鸡肉糜样品,8个为纯猪肉糜。在10000~4000 cm-1波数范围内进行光谱扫描,采用PLS-DA方法建立判别分析模型。结果所建判别模型对校正集和预测集的正确判别率均可达100%。表明近红外漫反射光谱可以提供一种快速鉴别猪肉糜中是否掺有鸡肉糜的方法。
In order to fast and accurate to qualitative discrimination if there are minced chicken in minced pork, minced chicken was added in minced pork in different ratio. Total 74 adulterated samples were prepared, include 60 samples which were mixed with different mass fraction chicken and 14 samples which were pure minced pork. Moreover, 39 validation samples were prepared, include 31 samples which were mixed with different mass fraction chicken and 8 samples which were pure minced pork. All the samples were scan at 10000~4000 cm^-1. Discriminant analysis model were built with PLS-DA method. The results shown that the discriminant model has 100% correct classification to calibration assemble and prediction assemble. It indicate that near infrared diffuse reflectance spectroscopy can provide a rapid method for discrimination of minced chicken in minced pork.
