摘要
膳食纤维作为人体必需的"第七营养素",因其含有多样而独特的性质备受关注,为开发利用龙眼壳中膳食纤维,促进龙眼资源的综合利用,本文以龙眼壳为原料,分别采用热水浸提法和酸碱法制备水溶性膳食纤维和水不溶性膳食纤维,并对水不溶性膳食纤维进行特性分析,以期为开发利用龙眼壳中膳食纤维提供参考。主要研究了料液比、提取温度、p H、提取时间对龙眼壳中水溶性膳食纤维提取效果的影响,并采用正交试验对提取条件进行了优化。结果表明,制备龙眼壳水溶性膳食纤维的最佳工艺条件为:料液比1∶30,提取温度60℃,p H为5.5(不调),提取时间为40min。龙眼壳水不溶性膳食纤维产率为38.5%,持水性为5.04g/g,溶胀性为1.52m L/g,说明龙眼壳是一种良好的膳食纤维资源。
As the seventh essential nutrient for human body, dietary fiber receives much attention for its diverse and special properties. In order to develop and utilize longan shell dietary fiber, promote and provide reference of comprehensive utilization of longan, the longan shell was selected as raw material. The soluble dietary fiber was extracted by hot water and insoluble dietary fiber was extracted by acid - alkali extraction. The haracteristics of water insoluble dietary fiber from longan shell were analyzed. The studies on the influence of the ratio of material to solvent, extracting temperature, pH and extracting time on the yield was conducted and optimized by orthogonal test. The optimization conditions of making soluble dietary fiber from longan shell were as follows : the ratio of material to solvent 1 : 30, extracting temperature 60℃, pH 5.5 ( unchanged), extracting time 40 minutes. The product of insoluble dietary fiber from longan shell is 38. 5%, water holding capacity is 5.04g/g, swelling property is 1.52mL/g. It shows that longan shell is a good resource of dietary fiber.
