摘要
综述了抗冻蛋白(Antifreeze Protein,AFP)的分类,包含鱼类抗冻蛋白、植物抗冻蛋白、昆虫抗冻蛋白、真菌及细菌抗冻蛋白;并就其特性及提取方面进行了介绍。本文还介绍了近年来抗冻蛋白在食品行业、医学、农业等方面的应用进展:在食品行业作为食品添加剂,显著改善食品品质;在医学方面,作为冷冻保护剂成功实现了动物的卵母细胞、精子、胚胎、组织等的低温保存;在农业方面,利用基因工程的方法,得到具有抗冻蛋白基因的转基因植物,能显著提高其抗冻性。
This paper reviews the classification of antifreeze proteins(AFPs), including fish antifreeze proteins,antifreeze proteins, antifreeze proteins, fungal and bacterial AFPs; and the characteristics and extraction were also introduced. The applications of antifreeze proteins in food industry, medicine industry and agriculture industry were in review. In food industry, AFPs play an important role as food additives to improve food quality. In medicine industry, AFPs could protect oocytes, sperm, embryo and tissues in subzero nonfreezing cryopreservation as cryoprotectant. In agriculture industry, using the method of gene engineering, the transgenic plants with got the antifreeze protein gene, which can significantly improve the frost resistance.
