摘要
试验旨在研究α-酮戊二酸对热应激肉鸡生长性能和肌肉品质的影响。通过给高温应激肉鸡饲喂含0.5%α-酮戊二酸(α-ketoglutarate,AKG)的日粮35 d,研究AKG对热应激肉鸡生长性能、肌肉品质、抗氧化功能和能量代谢的影响。结果表明:1与对照组相比,热应激处理显著降低了肉鸡(1~35日龄)的生长性能(P〈0.05)和组织(胸腺、肝脏、胸肌和腹脂)的相对重量(P〈0.05),同时也降低了肉鸡胸肌的a值、抗氧化酶(过氧化氢酶CAT和谷胱甘肽过氧化物酶GSH-Px)的活力、三磷酸腺苷(ATP)和二磷酸腺苷(ADP)含量及能荷(EC)值,但是提高了肉鸡胸肌一磷酸腺苷(AMP)的含量(P〈0.05)。2日粮中添加0.5%的AKG降低了热应激肉鸡的料重比(1~35日龄)、胸肌AMP含量(P〈0.05),提高了热应激肉鸡血液抗氧化酶(CAT、SOD和GSH-Px)的活力(P〈0.05),胸肌ATP、ADP和腺苷酸池(TAN)的含量及EC值(P〈0.05)。因此,日粮中添加0.5%的AKG可以降低热应激肉鸡的料重比,提高血液的抗氧化能力,改善胸肌的能量代谢。
This study was conducted to investigate the effects of α-ketoglutarate(AKG) on growth per-formance, meat quality, antioxidative function, and energy metabolism of broilers under heat stress.Two hundred 1-day-old Cobb chickens were randomly divided into four groups(control group, heat-stress group, VC group, and AKG group). Broilers in control group were fed the basal diet, and the VCand AKG groups were fed the basal diet supplemented with 0.025% vitamin C and 0.5% AKG, respec-tively. The feeding trial lasted for 35 days. The results showed that: 1 Compared with the controlgroup, heat-stress decreased the growth performance(P〈0.05), as well as the activity of antioxidativeenzymes(CAT and GSH-Px), the levels of ATP, ADP, and energy charge, and the relative weight of thy-mus, liver, breast muscle, and abdominal fat, but increased(P〈0.05) the AMP level. 2 Compared withthe heat-stress group diet supplemented with 0.5% AKG increased the activities of serum CAT, SOD,and GSH-Px(P〈0.05), levels of ATP, ADP, TAN, and EC in breast muscle, but reduced the ratio offeed to gain, and AMP content of heat-stressed broilers(P〈0.05). These results suggested that diet withsupplementation of 0.5% AKG can increase the antioxidant capacity and improve muscle energy metab-olism and feed conversion efficiency of broilersunder heat stress.
