近红外光谱技术在食用油种类鉴别及定量分析中的应用 被引量:13

摘要 用近红外光谱技术与聚类分析方法相结合,建立了一种可用于鉴别食用油种类的快速鉴定模型。实验根据30个食用油的近红外光谱,建立了芝麻油-大豆油-花生油-玉米油定性识别的模型,模型的识别率和预测率可达到100%。根据40个芝麻油样品的近红外光谱建立芝麻油的酸价预测模型,且模型指标较好。可见近红外光谱技术在食用油快速检测方面有较好的应用前景。 U sing nearinfrared spectroscopy (N IS)com bining w ith clustering analysism ethod,a rapid identification m odelw hich can be used in edible oil identification w as set up. Experim ents based on 30 N IS of edible oil, and the qualitative identification of the m odel of sesam e oil-soybean oil-peanutoil-corn oilw asestablished.The recognition rate and forecastrate can reach 100% .B ased on N IS of40 sesam e oilsam ples,the acid value prediction m odelofsesam e oilw asestablished,and the index m odelw asbetter.V isible N IS technology had good application prospectin rapid detec-tion ofedible oil.
