南阳市市售油炸、烧烤食品苯并(a)芘检测分析 被引量:7

The detection and analysis of Benzo(a) pyrene in fried foods and grilled foods in Nanyang

摘要 目的对南阳市市售油炸、烧烤类食品进行抽样检测,以了解本地此类食品中苯并(a)芘污染状况。方法采用随机抽样的方法,在全市13个县区对油炸、烧烤类食品进行采样调查,检测苯并(a)芘含量。结果共采集样本680份,苯并(a)芘平均含量为0.69μg/kg,超标率为1.18%;其中油炸食品中苯并(a)芘平均含量为0.51μg/kg,超标率为0.48%,烧烤食品中苯并(a)芘平均含量为0.77μg/kg,超标率为1.48%。结论南阳市油炸、烧烤类食品中苯并(a)芘总体污染状况较轻,但个别烧烤食品的检测值很高,应加强监督管理,以保障餐桌食品的安全。 Objective We sampling tested the fried foods and grilled foods in Nanyang in order to understand the situation of Benzo (a)pyrene contamination of these kinds of local foods. Methods We did the random sampling of the fried foods and grilled foods in the 13 counties of Nanyang to test the purity of Benzo (a) pyrene. Results A total of 680 samples were collected, and the average content of Benzo (a)pyrene was 0.69 tz g/kg, which had exceeded the rate of 1.18 %, where the content of Benzo (a) pyrene in fried foods reached to 0.51 ~ g / kg, exceeding the rate of 0.48 % and the content of Benzo (a) pyrene in barbecue foods reached to 0.77 tzg/kg, exceeding the rate of 1.48 %. Conclusion The overall food pollution situation in fried foods and grilled foods is nothing serious but individual barbecue foods have a high detection value, which requires relevant departments to strengthen supervision and management in order to protect the safety of the table food.
