摘要
目的了解成都双流国际机场2008—2013年航空食品微生物检验情况,掌握双流国际机场航空食品卫生现状。方法对双流国际机场内两家航空食品公司所生产的不同类型航空食品进行微生物检验,检验项目包括细菌菌落总数、大肠杆菌、沙门菌、金黄色葡萄球菌、蜡样芽胞杆菌、产气荚膜梭菌、霉菌和酵母菌。收集2008—2013年双流国际机场航空食品微生物检验结果进行分析,使用SPSS15比较不同航空食品公司、不同样本类别、不同季节产品的合格率有无统计学意义。结果 2008—2013年共对1 158份航空食品进行了微生物检验,航食企业A平均合格率为99.23%,航食企业B平均合格率为98.43%;生菜类样本合格率为100.00%,冷荤类样本合格率为98.62%,热食类样本合格率为99.10%,糕点类合格率为99.65%,冰块类样本合格率为94.41%;1-3月份样本合格率为99.31%,4-6月份样本合格率为97.91%,7-9月份样本合格率为99.30%,10-12月份样本合格率为98.63%。不合格项目包括11份样本细菌菌落总数超标,3份蜡样芽胞杆菌超标。结论成都双流国际机场航空食品微生物检验结果总体良好,但仍存在检出蜡样芽胞杆菌超标的情况。冰块类样本检验合格率明显低于其他类型食品。因此,应加强相关产品的监管。
Objective To know the situation of airline food microbiology inspection of Chengdu Shuangliu International Airport between 2008 and 2013, and to grasp the airline food hygiene status. Methods Different types of airline food were tested, which produced by two airline food companies in Shuangliu International Airport between 2008 and 2013. Inspection items include Colonies, E. coli, Salmonella, Staphylococcus aureus, Bacillus cereus, Clostridium pe-ingens, yeasts and molds. Microorganism inspection results were collected and analyzed by SPSS15 to obtain the difference of qualification rate among different airline food companies, different sample classes, and different product seasons. Results From 2008 to 2013, a total of 1158 samples of food products have been tested from the two airline food companies. Average pass rate of airline food company A and B were 99.23% and 98.43%, respectively. By sample category, pass rates were 100% in lettuce, 98.62% in cold meat, 99.10% in hot food, 99.65% in cake, and 94.40% in ice, respectively. Analyzed the samples by seasons, sample pass rates were 99.31% from January to March, 97.91% from April to June, 99.30% from July to September, and 98.63% from October to December, respectively. 11 samples were overproof in bacterial colony forming units; 3 samples are unqualified in Bacillus cereus. Conclusion The overall inspection results of airline food was satisfied, but Bacillus cereus bacteria was detected in some samples. Compared to other category samples, ice cube samples had lower qualification rate. Therefore, we should stengthen the supervision of related products.
