介绍了辐照技术的定义及作用机理,讨论了辐照处理对食品感官及营养成分的影响,重点介绍了辐照技术在肉制品中的应用及其检测方法,并展望了食品辐照技术的发展前景。
The definition and the mechanism of irradiation technology were introduced, and the effect of irradiation processing on sensoryquality of food and nutritional ingredients was discussed, the application of irradiation technology in meat products and its measurement meth-ods were focused on, at last the application prospects of irradiation technology were forecasted.
