摘要
目的:建立肉及肉制品中动物源性成分快速识别方法。方法:利用动物线粒体DNA设计通用引物,以样品中提取DNA为模板,基于PCR-DGGE技术确定肉及肉制品中所含有的动物源性成分。结果:该方法能准确、快速鉴别常见动物源性成分。结论:该方法可用于肉及肉制品中动物源性成分的准确识别。
Objective: To establish a rapid detection method for meat species in meat and meat products. Methods: The use of polymerase chain reaction-denaturing gradient gel electrophoresis(PCR-DGGE) technique in identifying meat species was evaluated. Identification was achieved comparing the PCRDGGE patterns obtained from the analysed products with the ladder bands. Results: PCR-DGGE assays enabled identification of the meat species initially presenting in meat or meat products. Conclusion: Established PCR-DGGE analysis method is situble for detection of common meat species.
