摘要 超声波技术作为一项高新技术,可辅助反胶束体系提高大豆蛋白的萃取率。该文就超声波辅助不同反胶束体系萃取大豆蛋白的机理、特点及工艺萃取参数进行综述,以期为提高大豆蛋白萃取率,探究萃取大豆蛋白的最佳工艺提供理论参考。 As a new kind of technique,the ultrasonic method can improve the rate of extraction of soybean protein in reverse micelles.In order to improve the soybean proteind extraction,provided some reference to explore the optimal process of soybean protein extraction,the mechanism,characteristics, and extraction parameters of the ultrasonic assisted extraction of soybean protein in different reverse micelles were reviewed in this paper.
