摘要
采后果蔬仍然具有生物特性,在贮藏或销售过程中会进行新陈代谢,这个过程伴随着热量交换和质量传递,研究该过程有利于掌握果蔬的品质变化规律,优化贮运设备。在阐述果蔬传热传质过程中水分迁移基本原理的基础上,综述了目前在果蔬传热传质研究上应用较广泛的方法,包括试验方法、数学模型方法和CFD方法,并分析比较了不同方法的特点。其中,试验研究具有准确、直观性强等特点,但往往需要投入较大的成本;数学模型方法为果蔬品质变化的预测提供了新途径;数学模型和CFD方法具有不受果蔬季节性限制等优点,但需对结果进行修正和验证。
The process of mass and heat transfer happens during the storage of fruits and vegetables. Investigating such processes benefits obtaining the change law of their quality and the optimizing of the storage and transport equipment. On the base of describing the principle of mass and heat transfer in fruits and vegetables, this paper reviewed the relative widespread used research methods in such field, including experimental methods, building mathematical models and CFD simulation methods. Meanwhile, the analysis and comparison among them were given. We found that experimental methods had the properties of high accuracy, high direct-view and high cost, mathematical models provided a new way to predict the quality change of fruits and vegetables, and that mathematical models and CFD simulation methods were not limited to season change, while they needed modification and verification.
