摘要
以中华绒螯蟹(Eriocheir sinensis)为研究对象,探讨芝芪菌质对中华绒螯蟹肌肉和性腺中肌苷酸含量的影响.将中华绒螯蟹随机分成4组,每组2个平行.第1组为对照组,常规投喂;另3组为试验组,在基础饲料中按0.25%、0.5%、1%的添加剂量加入芝芪菌质,饲养90 d后,采用HPLC法测定其肌肉和性腺中肌苷酸的含量.试验表明,中华绒螯蟹在食用芝芪菌质后,试验1组、试验2组、试验3组雄性螃蟹肌肉中的肌苷酸含量相比对照组分别提高41.30%、11.59%和36.96%,差异显著(P<0.05);雌性螃蟹肉中的肌苷酸含量相比对照组分别提高21.92%、15.79%和10.53%,差异显著(P<0.05).但试验组的中华绒螯蟹性腺中的肌苷酸含量影响不大,显示芝芪菌质对芝芪菌质对中华绒螯蟹肌肉风味起到改善作用.
This paper is to study the effect of Zhiqi fungal substance on the composition of inosine monophosphate in Eriocheir sinensis.Eriocheir sinensis were allotted into 2 groups randomly.The control group was fed with the basal diet;the other,the treated group,fed with the basal diet supplemented with 0.5% Zhiqi fungal substance for90 days.After that,the inosinic acid contents in the muscle and gonads of mitten crabs were determined by HPLC.The results show that Zhiqi fungal substance can improve the contents of inosine monophosphate in Eriocheir sinensis and indicate that dietary Zhiqi fungal substance can improve the flavor of the cultured shrimp.
