摘要
核桃是中国重要的木本粮油经济作物,其仁、壳、花、叶等也富含多种营养及活性成分,具有较大的开发利用价值。文章对核桃仁、核桃青皮、核桃壳、核桃花、核桃叶等部位的营养成分、生理功能及开发研究现状进行综述,旨在为中国核桃资源的深加工及综合利用提供参考。
Walnut is an important woody grain and oil industrial crops in China, its kernel, shell, flowers, leaves and so on are rich in a va- riety of nutrients and active ingredients and with great utilization val- ue. In this paper, the nutrition, biological activity and the develop ment research situation of walnut kernel, walnut green husk, walnut shell, walnut flower, walnut leaf were summarized, which providing some references for comprehensive deep processing and utilization of walnut resources in our country.
