摘要
为了保证罐装八宝粥的质量安全,将HACCP应用于其的生产全过程。分析了其生产中各个环节的潜在危害,确定了影响产品质量安全的原料验收、空罐验收、装罐、封口、杀菌和冷却5个关键控制点,并制定了相应的预防措施、关键限值以及计划表和纠偏措施,显著提高产品的安全性。
In order to assure quality safety of canned rice porridge, HACCP system was adopted in production process of canned rice porridge. Potential hazards in processing of each step were analyzed, five critical control points were identified: check and acceptance of raw materials, empty jar acceptance, canning process, test tank, sterilization and cooling. Preventive measure, critical limit, schedule and correct measures were also established, results showed that safety of product was significantly improved.
