摘要
菌落总数是判定食品被微生物污染程度的一个重要标志,具有重要的卫生学意义。本文综述了一些快速检测食品菌落总数的实验方法及进展,如放射测量法、微热量法、阻抗法、ATP生物荧光法、近红外光谱技术等方法,并对今后的检测方向作了展望。
Total number of colonies' as a target for extent of contamination in food' is very important in sanitiza- tion. This paper reviews the progress in the experimental and some methods of rapid detection of food colony num- ber' such as radiation measurement' microcalorimetry method' impedance method' ATP bioluminescence method' near infrared spectroscopy method' and so on. And make a prospect of the detection for the future.
